
Summer Chicken Soup Recipe
It's summer and an extremely hot one at that... Therefore, it's important to stay hydrated and serve cooked meals. This week, we recommend this Transylvanian chicken soup, with a unique flavor. It features seasonal vegetables, and the sour cream and tanginess will make this dish easily win the hearts of your family members!
Ingredients
- 8 chicken wings
- 100 g peas
- 100 g green beans
- 2 onions
- 1 carrot
- 1 parsnip
- 1 zucchini
- 1 bell pepper
- 1 small cauliflower
- 4 tomatoes
- 2 potatoes
- 2 eggs
- 3 tablespoons vinegar
- 100 g sour cream
- 3 liters water
- 3 tablespoons herbs (lovage and parsley), chopped
- salt
Preparation Method
- The chicken wings are washed and boiled in 3 liters of salted water.
- Once it starts to boil and the foam has been skimmed off, add the peas, beans, and all the other vegetables, cleaned, washed, and cut into small cubes.
- Everything is boiled for 30-35 minutes over medium heat. After this interval, sprinkle in the salt and pour in the vinegar.
- The eggs are beaten and added in a thin stream to the boiling soup, stirring with a fork to form curds.
- Sprinkle with herbs and remove the pot from the heat. When serving, add a tablespoon of sour cream to each plate.
Suggestion
You can add any seasonal vegetables (kohlrabi, broccoli, leeks, etc.) to this soup, aside from those listed. This dish has a special flavor if soured with borscht or green plums.
